Not to be confused with My Thai Cooking LESSON. I have now cooked all of the dishes except for one that Paunnee taught me. So now I will tell you how it went. The good. The bad. The ugly…
Since I bought all of those amazing fresh veggies when I shopped the other day at Golden Mile and Tekka Market, I have to use them before they ruin so it forced me to cook Thai twice this week. And we’re still going to have to eat veggies for breakfast lunch and dinner for the next three days and I still won’t finish them off.
So far I’ve made everything Paunnee taught me to make except the Tom Yum Soup. I’ll probably make that sometime this weekend just to use up some more of those veggies. Can we eat Thai food three times in one week? I think we’ll manage.
On Tuesday, I cooked Green Curry Chicken and Mango Sticky Rice. The Green Curry Chicken didn’t work out so well. I called Paunnee at least twice for advice. She was so patient with me. I cannot thank her enough for being so available. We were able to eat it, although Anna pretty much just ate rice and maybe some ice cream but it was SUPER spicy and just not all that flavorful. Not sure what I did wrong but it was pretty much a fail. I’ll be trying that again soon. I’ve got to figure it out because that’s my favorite. I may have to get Paunnee over to watch me do it so she can tell me what I might have done wrong.
Then as I kept trying to make it not so spicy by adding more of my fresh coconut milk, I ended up using all of it forgetting that I needed some for the sticky rice. ugh… Luckily I had some boxed coconut cream in my pantry so I used that for the sticky rice.
Man, I knocked that out of the park!! It was fabulous and I loved using my new sticky rice cooking basket and pot. The label on the bottom of the pot says “Made in Thailand”. LOVE THAT!! LOVE Mango Sticky Rice!!! To bad my kids don’t love it. Oh well… more for me!
Tonight I made the Beef Salad or I think it’s also called Lemon Beef only she taught me using lime so I guess it’s Lime Beef. That was delish! I got ribeye steak and actually had it cut too thin but it still worked out great. It’s really just broiled steak cut really thin with lime squirted all over it and lettuce and cucumbers on the side. A little cut up red chili pepper if you like. I don’t like but Tommy like.
And I also made Vegetable Noodle Stir Fry. I used a little too much sauce so it was too salty but definitely edible. I started cooking this one and our gas tank started running empty. We made it though. Phew. I even cut the carrots just like Paunnee did. Fancy, huh?
All together now I’d say the scale tilts in my favor with 1 definite win (mango sticky rice), 1 pretty darn good (beef salad), 1 ok (stir fry) and 1 not so much (green curry chicken. Still 1 to go (tom yum soup) so the verdict is still out. Our bellies are full right now and that counts for something.

This has sure been a fun ride for me. I’ve loved every minute of trying new recipes even in my really warm and humid Singapore kitchen. Tomorrow, Paunnee and Miki are coming over to learn how to make Taco Soup and Salsa. Those are not NEAR as challenging as the foods they’ve taught me to make but I’m ever so happy to share some yummy Mexican flavor with them and most of all to spend time with them.
